THE BEAUTY AND THE BEAST
A new Asian interest in very large U.S. oysters has inspired this issue. Just how important is size? Does the taste change with age? Do you get more meat with a larger oyster or is it just more shell? To read the new April issue of Oyster Information please click on the subject listed in the margin to the right. Thank you very much for visiting this site. To become a subscriber and receive e-mailed links to each new newsletter, please fill out and send the "interest form." Enjoy! Ed.

ROMANCING THE PEARL The new issue of OI is about pearls. While they have little to do with enjoying an edible oyster, pearls have everything to do with the lore and romance of oysters. We hope that you will share our fascination with the subject. To read the issue, just click on the subject in the list in the right margin. Ed.

THE SUBJECT IS OYSTER /WINE MATCHING It is October and that means it is time for publishing the quarterly issue of Oyster Information newsletter. Please see the link below. http://shuckathome.webs.com/oystermatching.htm You will note that the format is a little different and the name Home Shucking News appears along with OI newsletter. The subscription base of both newsletters is combined for this issue. Over the coming winter months, I hope to consolidate our current four publications and figure out some way to access them more easily. For the moment, they are all separate but linkable. I am very interested in your ideas and comments, as always. Your individual e-mails are very important to me and remain the main reason I continue to publish this material. Thank you for staying tuned. I hope that you enjoy this issue! Ed.

Go to the WALL button to see the most recent entries. http://www.facebook.com/OINewsletter It is a lttle different in tone than the normal quarterly newsletter. The emphasis is on graphics and it is lighter in spirit. We try to combine information and entertainment. The entries are also more frequent. Please let us know what you think of this new APP. Thank you. Ed.

The April issue of OI was successful in attracting interest from the East Coast Shellfish Grower's Association (ECSGA), a large organization that includes growers, researchers, and related shellfish business interests from Maine to Florida. As I soon discovered, the ECSGA also includes interested members from many other countries. While it is intimidating to have so many knowledgeable readers, their periodic review of this publication will certainly assure more factual accuracy. Two members of the organization - Rob Rheault PhD and Dana Morse PhD, both marine scientists experienced in oyster knowledge and education - have been regular reviewers of this publication for many years. There is a profound underlying admiration for oysters fueling the interest of all of the people who regularly read OI. Expanding our own knowledge has only increased the admiration. The more readers, the merrier. Ed.
